Pork Taster on Cos Lettuce

As an appetiser, this is delightful. Served on Cos lettuce it delivers a subtle taste of the Orient. This could also be served cold on thin slices of rye bread for an original finger food idea

  • 200g minced pork
  • 1 small onion
  • 1 red chilli pepper, deseeded and chopped very finely
  • 8 button mushrooms, scrubbed and sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon cider vinegar
  • 1 tablespoon corn flour
  • 200ml stock made from a vegetable stock cube and boiled water.
  • 1 tablespoon of rapeseed oil
  • 3 heads of Cos lettuce.


  1. Peel and chop the onion very finely. In a saucepan, heat the oil and add the onion.
  2. Cook for 2 minutes before adding the chilli and mushrooms.
  3. Next add the mince and cook, stirring to ensure it is thoroughly cooked through.
  4. Blend the corn flour with a little cold water before adding the stock.
  5. Next add the vinegar, soy sauce and sugar to the stock.
  6. Gradually add the liquid to the pork, stirring all the while.
  7. Cook for 15 minutes or until such time that the sauce has thickened.
  8. Allow to cool slightly before spooning on to Cos lettuce leaves.
  9. Serve immediately on white platters.
